Last month, I shared my mom’s Mars Bars Squares with you, and here’s another one of her recipes that she hooked me on, and subsequently everyone who came into contact with me and these cupcakes.
My mom called them muffins – I don’t know if that made her believe they were healthy or if it was because they don’t have icing. Either way, I am pretty sure they qualify as a cupcake. An icing less cupcake, but cupcake none the less. (Icing isn’t needed because of the filling.)
So how do you make these babies you ask?
You will need:
1 batch of chocolate cake batter (made from scratch or prepared from box according to directions)
1 lb cream cheese
1 egg
1/2 cup sugar
1 pinch of salt
6 oz chocolate chips (I use milk chocolate)
Mix the cream cheese, egg, salt, and sugar in a bowl (separate from the cake mix) until smooth. Stir the chocolate chips into the cream cheese mixture.
In a mini muffin tin (or regular), place one layer of cake mix, one later of cream cheese mix, and top with a little cake mix. Bake according to directions on box.
Pretty simple, right? The only challenging part is making them last more than one evening!
